Over the weekend, I visited a local market with my family and had an amazing meal of jokbal (braised pig’s trotters). The restaurant was called “Balgun Jokbal”


As we walked through the narrow alleyways filled with the savory scent of spices and steaming pork, we were welcomed into a packed restaurant full of locals. The friendly owner greeted us warmly. We ordered a set menu with garlic jokbal for the adults, and bossam (boiled pork slices) for the kids to enjoy together.

 


This wasn’t just boiled pork. The jokbal had been slowly simmered in a rich broth infused with soy sauce, ginger, garlic, and traditional Korean herbs. The result? A deeply savory, umami-rich flavor that melted in our mouths. The jokbal paired perfectly with salty fermented shrimp sauce, raw garlic, and fresh lettuce wraps.

 


Jokbal is a dish that reflects Korea’s traditional cooking techniques and bold flavors. It’s not just street food—it’s a true representation of authentic Korean cuisine worth sharing with the world.

 


One of the best parts of our market meal was the side of spicy cold noodles (Tray Noodles) we ordered with the jokbal. The chewy pork and the tangy, refreshing noodles were the perfect duo—flavorful and balanced.
